Mexican Mushrooms

This is one of my greatest achievements yet. My entire life seems to have led up to this moment.

Mexican Mushrooms


Ingredients:


1 large portobello mushroom

3 tbsp salsa dip

2 tbsp butter

Salt

Pepper

Dried Rosemary

Dried Oregano

Parmesan, mozzarella or cheddar cheese

Directions:

1. Melt one tablespoon of butter in a small saucepan over medium-high hotplate.

2. Fill the stalk side of the mushroom with the rest of the butter and sprinkle with salt, pepper and herbs.

3. Cook the mushroom in the saucepan, stalk up and cover for 4-5 minutes.

4. Flip the mushroom and do the same for the other side. 

5. When the mushroom looks cooked through, turn it over again and fill the stalk side with the salsa. Top with cheese and replace the cover for another minute.

6. Remove carefully from the saucepan and serve with the left over melted butter and herbs as sauce.
